Ingredients:

2 slices whole grain bread

1 ripe avocado

2 eggs

Salt and pepper

Optional: chili flakes or lemon juice
Instructions:

Toast the bread slices until golden brown.

Mash avocado with a pinch of salt, pepper, and optional lemon juice. Spread on toast.

Poach eggs in simmering water for 3-4 minutes for a runny yolk.

Place poached eggs on top of avocado toast, sprinkle with chili flakes if desired, and serve immediately.
