Easy Veggie Fried Rice



Ingredients:

  • 2 cups cooked rice (preferably cold)

  • 1 cup mixed vegetables (peas, carrots, corn)

  • 2 eggs

  • 2 tbsp soy sauce

  • 1 green onion, chopped

  • 1 tbsp oil


Instructions:

  1. Heat oil in a pan over medium heat. Add vegetables and sauté for 2-3 minutes.

  2. Push veggies to the side and scramble the eggs in the same pan.

  3. Add cooked rice and soy sauce. Stir everything together for 3-4 minutes until heated through.

  4. Garnish with chopped green onion and serve hot.
