Ingredients:

2 cups cooked rice (preferably cold)

1 cup mixed vegetables (peas, carrots, corn)

2 eggs

2 tbsp soy sauce

1 green onion, chopped

1 tbsp oil
Instructions:

Heat oil in a pan over medium heat. Add vegetables and sauté for 2-3 minutes.

Push veggies to the side and scramble the eggs in the same pan.

Add cooked rice and soy sauce. Stir everything together for 3-4 minutes until heated through.

Garnish with chopped green onion and serve hot.
